How to Make Oregano Sweet Lemon Wedges

Ingredients
- 6 medium potatoes
- ½ tsp salt (or to taste)
- 1½ tbsp lemon juice
- 1 tsp lemon zest
- 1 egg
- ½ cup all-purpose flour
- 1 tbsp oregano-flavored cornstarch
- 3 tbsp hot tomato sauce
- 2 tbsp sugar
- ½ tsp black pepper powder
- Oil for frying
Method
Peel the potatoes and cut each into 6 long wedges. Parboil the wedges, then mix with a pinch of salt and 1 tsp lemon juice; set aside. In a bowl, combine flour, oregano-flavored cornstarch, beaten egg, 1 tbsp hot tomato sauce, a pinch of salt, and enough water to make a batter. Coat the potato wedges in the batter and deep-fry in hot oil until golden. In a separate pan, heat 1 tsp oil, then add 2 tbsp hot tomato sauce, sugar, and the remaining lemon juice. Add the fried potato wedges, stir to coat, then sprinkle with lemon zest and black pepper powder. Remove from heat and serve.
